Avoca Festive Scones

INGREDIENTS

Maked 6 Scones

454g Self-raising Flour
250g Milk
120g Cranberries
114g Butter
57g Caster Sugar
50g Milk Chocolate
1 Large Egg
1/2 Orange
3 tsp Orange Zest
3 tsp Mixed Cake Spice
1 tsp Baking Powder

METHOD

In a large mixing bowl, combine the flour, mixed spice and baking powder. Rub the butter into flour mix until combined and forming the consistency of breadcrumbs.

Mix in sugar, cranberries, chocolate drops and blitzed orange zest. Lightly dust your countertop with flour. Remove the dry mix from the mixing bowl and make a well in the centre.

Crack in the eggs and gently fold in the flour mix until combined. Gradually add enough milk to form a form dough. Sprinkle countertop with our once again. Rolling out your dough until the desired thickness is reached. Cut into your desired scone shape.

Brush the top with egg wash and a sprinkle of sugar. Bake in a preheated oven at 1700C for 20-25 minutes until golden brown.

Remove from the oven and leave to rest until cooled. Serve with fresh cream and Avoca jam, and enjoy!
