Thai Style Chicken Skewers

INGREDIENTS

Serves 4

4 Thai style chicken skewers from the Avoca Butcher
1 red chilli, sliced thinly
1 tablespoon olive oil
Small bunch coriander, roughly chopped
1 lime, cut into ¼
Sea salt & freshly cracked pepper

METHOD

Season skewers with salt & pepper.

Grill over high heat on the BBQ until cooked through, 12-14 minutes, making sure the juices run clear.

Toss with olive oil, sliced chilli, a squeeze of fresh lime juice & some coriander.

Serve with extra lime wedges!
