Sage & Onion Sausage Rolls

INGREDIENTS

Makes 16 mini sausage rolls

6 large pork sausages, skins removed
2 tsp your favourite onion marmalade
Small bunch of sage leaves, chopped
225 grams ready made puff pastry sheet
1 egg beaten with a splash of milk
Sesame seeds

METHOD

Pre heat oven to 180C. Line a baking sheet with greaseproof paper.

In a mixing bowl add the sausage meat that you have taken out of the casings, the onion marmalade & sage. Mix well with your hands so everything is well combined.

On a floured work surface, roll out the puff pastry. Cut in ½ lengthways so you have 2 long rectangles.

Roll the sausage meat with your hands to create sausage shapes & place in the middle of your puff pastry. Make sure to keep it even all along the way.

Mix the egg & a splash of milk. Brush the bottom of the pastry & roll the top part over the sausage meat to cover completely. Using a fork, press down on the seam to seal the roll. This also makes a nice design on the finished sausage rolls.

Cut the rolls into 2 inch pieces & place onto baking sheet.

Glaze the tops with the egg wash & sprinkle with sesame seeds.

Bake in the oven for 18-22 minutes or until golden brown, puffed & cooked through.
