Mint & Cucumber Tzatziki


300 grams thick Greek yoghurt
1 cucumber, coarsely grated
2 cloves garlic, minced finely
1 lemon, juiced & zested
½ bunch mint, chopped
1 tablespoon good quality olive oil
Sea salt & freshly cracked black pepper


Grate the cucumber & place in a dish towel over a bowl. Squeeze out as much liquid as possible.

Add the cucumber to a medium size bowl & add the remaining ingredients.

Check the seasoning & adjust if necessary.

This dip is perfect served with grilled lamb chops, vegetable crudité, warm pita or flatbreads - the possibilities are endless!
