Quinoa and Sweet Potato Fritters

INGREDIENTS ----------- 3 sweet potatoes 250g cooked red quinoa (boiled until it opens up a little) 1 kg of spinach, chopped 100ml lime juice 1 spoon diced chili 100g breadcrumbs 100ml Greek yoghurt 300g Fivemiltown goat's cheese 1 preserved lemon, finely diced 50g finely sliced parsley 50g finely sliced mint 1 tsp cracked black pepper 5 eggs 10 cloves of black garlic

Method:
1. Bake the sweet potatoes until soft.
2. Allow to cool, then scrape out the flesh and mix with all the other ingredients, grating the garlic and mixing the goats cheese in last.
3. Check the seasoning and adjust to taste.
4. Divide into fritters, and cook at 155 degrees until golden brown.
