Classic Napolitana Pasta Sauce


3 tins good quality plum tomatoes 
2 white onions, chopped 
3 cloves garlic, minced 
1 bunch fresh basil
30 ml olive oil 
Sea salt 
Freshly cracked black pepper 
Caster sugar


Add olive oil to a medium saucepan & sauté onion & garlic on a medium heat until soft & translucent. 

Add the plum tomatoes & crush slightly with a fork to release their juices. 

Simmer on low heat for 20 minutes until all the flavours come together. Add fresh basil, season with salt, pepper & sugar. Just add enough sugar to sweeten the tomatoes if they are too acidic. 

With a hand blender, blend sauce slightly but not to a puree. Its lovely to have some chunky tomato throughout the sauce. Check the seasoning & adjust to your preference. 

Now you have a delicious sauce that can be used in numerous ways for any pasta dish.
