Chargrilled Vegetables


Serves 6

1 aubergine, cut lengthwise into ⅙
1 courgette, sliced into thick rounds
2 red onions, cut into ¼
1 bunch, asparagus, thick stems removed
1 red pepper, cut into ⅙
1 yellow pepper, cut into ⅙
1 bunch cherry tomatoes on the vine
Fresh thyme sprigs
3 tablespoons olive oil
Sea salt & freshly cracked black pepper


Marinate all the vegetables with olive oil, salt, pepper & thyme.

Grill on high heat until nicely caramelized.

Arrange on a large platter & serve with mint tzatziki. Enjoy!
