Best Ever Cinnamon Rolls

INGREDIENTS

Makes 9

The dough:

180 ml milk, warmed to 110F
7 grams, dried fast acting yeast
52 grams, caster sugar
1 egg + 1 egg yolk, room temperature
55 grams unsalted butter, melted
384 grams, strong bread flour
¾ teaspoon sea salt

The filling:

135 grams brown sugar
1 ½ tbsp ground cinnamon
55 grams unsalted butter, softened

Cream cheese frosting:

115 grams cream cheese
42.5 grams unsalted butter, softened
75 grams, icing sugar, sifted
1 ½ teaspoon vanilla

METHOD

Warm the milk in the microwave for 45 seconds. It should be warm like a bath.

In an electric mixer with a paddle, add the milk & sprinkle the yeast on top.

Add the sugar, egg & egg yolk & melted butter. Mix well until combined.

With a wooden spoon add the flour & salt & mix until a dough begins to form.

Change the attachment to a dough hook & knead for 10 minutes until the dough becomes soft & smooth.

Transfer the dough into a well oiled bowl, cover with plastic wrap & a tea towel. Place the bowl in a warm area of your kitchen & let the dough rise for 1-1 ½ hours or until doubled in size.

Mix the brown sugar & cinnamon together in a bowl & set aside.

Tip the dough out onto a floured surface.

Roll dough into 1 long rectangle. Spread with softened butter.

Sprinkle the brown sugar mix evenly over both rectangles.

Tightly roll the rectangle starting from the 9” smaller side. You want fat cinnamon buns! Cut into 9 rolls.

Place the rolls cut side up into a baking tin that’s been greased & lined with paper. Cover with plastic wrap & towel & proof again for 30-45 minutes.

Bake in a preheated oven at 160C for 20-22 minutes until they are golden brown & & slightly darker around the edges.

Allow them to cool for 15 minutes before frosting them.

Meanwhile make the frosting. In a mixer with the paddle attachment add the cream cheese & butter & whip until light & fluffy. Add ½ the icing sugar & vanilla, beat again for 3 more minutes. Finally add the rest of the sugar & continue beating until icing is smooth, light & fluffy. 

Garnish with cream cheese frosting & chopped caramelised pecans if you like!
