Avoca Lemon Curd & Roasted Pistachio Pancakes

INGREDIENTS

This delicious recipe is perfect for those who want something a little different this Pancake Tuesday. The crunchy pistachios match perfectly with our tangy yet sweet lemon curd to make the perfect combination.

200g peeled (unsalted) pistachios
2 x tablespoons of Avoca Lemon Curd

Add this topping to our delicious buttermilk pancakes or crêpes.

METHOD

Add this topping to our delicious buttermilk pancakes or crêpes.

Preheat the oven to 180 degrees.


Roughly chop 200g of pistachios and place onto a baking tray. Roast for 10–12 minutes, tossing occasionally.

Once done, remove nuts and allow to cool.


Stack your pancakes and drizzle 2 tablespoons of Avoca lemon curd, sprinkle over your pistachios and tuck in!
