Amatriciana Pasta Sauce


Serves 4-6

1 recipe Classic Napolitana Pasta Sauce - find that recipe here
125 grams smoked Pancetta, diced 
2 plum tomatoes, roughly chopped
A pinch of crushed chilli 
50 grams grated Parmesan cheese 
½ bunch fresh parsley, chopped 
Sea salt 
Freshly cracked black pepper


Sauté the pancetta in olive oil until golden brown. 

Add the chilli & cook for a further 3 minutes on medium heat. Add tomatoes 

Add the Napolitana sauce & simmer for 20 minutes to let all the flavours come together. 

When ready to serve, take off the heat & stir in the parmesan cheese & parsley. 

Add to your favourite pasta, toss well to combine & serve immediately.
